News Desk, News Nation 360: The Astor Kolkata has transformed its renowned monsoonal culinary property, "Ruposhi Ilish – A Culinary Ode to Bengal," into a high-profile democratic showcase for ancestral gastronomy by inviting home cooks in the area to submit more than 100 family hilsa recipes that are closely guarded. On July 18, 2026, the hotel held an intense live cook-off finale after a tough selection procedure. The top five finalists replicated their ancestral dishes while being scrutinised by an expert corporate panel chaired by Executive Chef Azad Arif and General Manager Amit Kobat. The two winning championship recipes received permanent, premium spots on the festival's official commercial menu, marking a stunning victory for regional culinary innovation: Howrah-based fashion designer Shilpa Shat won first place with her expertly balanced, vibrant Mouri Posto Ilish Kalia (Hilsa braised in a fennel and poppy seed gravy), while 33-year-old makeup artist and cloud kitchen operator Arnab Biswas from Nadia astounded the jury with his aromatically complex Holud Patay Narkeler Dudh Diye Ilish Bhapa (Hilsa steamed in turmeric leaves with coconut milk). The month-long festival, which takes place as an exclusive à la carte lunch and dinner experience from July 25 to August 24, 2026, successfully unites elite hospitality with grassroots culinary storytelling, enabling discriminating foodies to enjoy these genuine, award-winning home-kitchen masterpieces alongside The Astor's signature legacy preparations.
